Taroz (Typical dish from Bormio)

Serve 6 people 
  • 600 gr. potatoes
  • 400 gr. french beans
  • 50  gr.  thinly sliced bacon
  • 200 gr. bitto or casera (tasty  mature cheese from Bormio)
  • 50 gr. butter
  • 50 gr. parmesan cheese
  • 1 onion
  • salt, pepper, breadcrumbs

Wash, peel and cut into pieces the potatoes and cook them in cold water. When the water starts to boil, add the french beans and  cook them. Drain the vegetables, mix them in a bowl and mash them with a wooden spoon, add salt and pepper. In a non-stick pan brown the bacon cut into pieces and the onion  with butter. Add the vegetables with all the flavoring. Oil a mould, add breadcrumbs and put the vegetables alternate to the cheese cut into small cubes.
cover the last layer with a lot of parmesan cheese and breadcrumbs. Bake at 180° for about 20 minutes until there is a golden crust. Serve it hot. If you  accompany it with boiled sausages, salami and pork meat or fried eggs, it is a very tasty single course.
