- 250 g. mascarpone cheese
- 3 eggs
- 6 table spoons of sugar
- Bisquits (savoiardi or maria)
- Coffee
- Dark cocoa powder
- Brandy
Mix the three yolks of the eggs with the sugar until it gets quite white; add the mascarpone and stir until obtaining a uniform cream. In the meantime, whip the white of the eggs (with a pinch of salt) and add them to the cream when well whipped. Make the coffee and let it get cold (if you want, you can add a spoon of brandy). Dip the bisquits in the coffee very shortly, not to get too wet, and make a first layer of bisquits in the plate. When the first layer is full, cover with cream; then, make the same for a second layer of bisquits and cover again with cream and so on. Finish with a layer of cream, put on top dark cocoa powder or dark chocolate. Let it rest in the fridge for 1/2 hours and serve cold.
