Chiacchere (typical Carnival treat)

  • 500 gr. flour 00
  • 30 gr. butter
  • 2 eggs yolks + 1 egg
  • a spoonful af sugar
  • a little glass of sambuca or grappa or other sweet liquor
  • 1/2 glass of dry white wine
  • 1 l. frying oil
  • salt
Work all the ingredients together adding wine until you get a soft and smooth mixture.
Roll out the dough with the purpose-made gadget in  a very thin layer. Cut into rectangular pieces and make a cut in the middle. In a pan heat the oil at 170° and fry the pieces of pastry one at a time. Lay them on a paper to drain, then spinkle with a lot of sugar.
